The culinary guide Gault&Millau Slovenia has announced the best for 2026, setting a new milestone for Slovenian gastronomy. The seventh edition brings a record number of top-rated restaurants, with 36 establishments awarded three toques and 14 awarded four. For the first time in Slovenia’s history, the highest distinction – five toques – was awarded, going to Hiša Franko. The title of Chef of the Year was awarded to Jure Tomič of Oštarija Debeluh. Among the special awards, recognitions for young talents and creators shaping a new generation of Slovenian cuisine also stand out.
The guide, produced in partnership with the Slovenian Tourist Board as its main partner, is based on evaluations by anonymous inspectors who visited more than 200 restaurants across the country this year. The 2026 selection is marked both by the breadth of establishments reviewed and by a focus on less exposed regions, where new and inspiring culinary stories are emerging. In particular, young chefs are raising the standard of Slovenian gastronomy with innovative approaches and respect for tradition, further strengthening its international reputation. Among the restaurants awarded three toques this year are also Gostilna Vovko from Ratež and Hiša Fink from Novo mesto, further confirming the high quality of the culinary offer in the Novo mesto area. Gostilna Vovko is renowned for its contemporary interpretation of Dolenjska cuisine, where a blend of tradition and creativity creates a distinctive gastronomic story, while Hiša Fink impresses with refined seasonal dishes, a strong focus on local ingredients, and a precisely crafted dining experience.


Alongside the Michelin Guide and the international ranking The World’s 50 Best Restaurants, Gault&Millau is considered one of the three most influential international guides in the world of gastronomy. It is known for its chef’s toques, awarded to restaurants worldwide. Establishments that meet Gault&Millau criteria can receive between one and five toques and are included in the guide.
